The Happy Herbivore: Black Bean Brownies

One of my New Year’s Resolutions was to make a new recipe each week from a cookbook. Cooking is so relaxing to me and I love being in the kitchen. I went to the book store and got a cookbook called Everyday Happy Herbivore written by Lindsay S. Nixon. In the first week I think I made five different recipes. They are so simple and use everyday ingredients that most people have at home. And best of all there vegan and low fat. Since I liked that book so much I ordered her other cookbook called the Happy Herbivore on Amazon. I sat and read it immediately and wanted to try every recipe. I've been so busy lately and have not had much time to get into the kitchen so today I decided to try the black bean brownies. Yeah I know it sounds crazy but I’m all for trying to take comfort foods and make them in the healthiest way possible. Lindsey has found ways to substitute fat in all her recipes with healthier alternatives. In this recipe the fat is substituted by the beans and the bananas. This recipe makes 9 brownies and each one has zero fat and almost 5 grams of fiber each and 3.5g of protein. You are not going to get that from a conventional brownie. The recipe says that they should take 30 minutes but check them at that time because mine had to go back in the over for another 10.
