Tofu Scramble

One of my favorite breakfast foods since going vegetarian is tofu scramble. This breakfast is full of protein and keeps you full until lunch. To be honest I'm not a fan of tofu at all. This is one of the only ways that I will eat it. Tofu is such a blank canvas and will pretty much take on whatever flavor that you add to it. There are many types of tofu. For this tofu scramble you are going to want to use firm or extra firm tofu. Also its so so important to buy organic tofu. Anytime you are buying a product with soy choose the organic varieties. Soy is one of the most common crops that is genetically engineered and buying organic ensures that its not genetically modified. Also if you live in Connecticut you can even find local tofu at whole food thats made right in Middletown Connecticut!! I always try to choose local when possible.
Ingredients:
1 lb firm tofu
3 tablespoons nutritional yeast
1 tablespoon dijon mustard
1 tablespoon garlic powder
1 tablespoon onion powder
1/2 cup fresh salsa
1 avocado
3 tablespoons prepared pesto ( I had some that was in the freezer that I made during the summer with the huge amount of basil we had) 


Directions: Serves 2
1- Spray pan with nonstick cooking spray and put on medium heat
2- Break up tofu and put in pan
3- Use a potato masher to mash the tofu until it looks like this. It looks a lot like scrambled eggs

4- Cook the tofu until it releases some of its water
5- Add all the remaining ingredients except the avocado
6- Cook until heated through
7- Serve and top each plate with 1/2 avocado chopped up
Final product!! Eat by itself or put into a wrap and enjoy as a breakfast burrito
